[interop] test configs

Well the interop event is coming up fast, eh?

We need to figure out server / domain configurations. One option is to
set up subdomains of a common domain for each server instance, such as:

ejabberd.xmpp.com
wildfire.xmpp.com

Etc.

These could point to local instances (just in our little test room) or
to IPs on the public Internet. What would be easier for people? I have
access to DNS for xmpp.[org|net|com] so we could use that, and we could
leave those subdomains up for later interop testing (personally I think
we might want to do some follow-up testing in the future, not force it
all into a day and a half in Portland).
