http://ejabberd.jabber.ru/mod_logxml
http://ejabberd.jabber.ru/mod_logmnesia
http://www.process-one.net/en/projects/j-eai/ (this contains ejabberd, but it
has some extra features such as conversation logs)

The guide is very helpful describing each option (in the PDF version there
also is an index to find each config option very fast), and the web interface
is also useful to configure things (you don't need to restart ejabberd then).

Well, probably, as ejabberd2 is not released yet :o) I suppose you mean
jabberd2? jabberd2 needs Bandersnatch for logging; AFAIK there are no
alternative logging solutions.

PS: Why do you prefer the logging and configuration of jabberd2 over ejabberd?

At least ejabberd's guide and probably all website documentation is up-to-date
(I hope se).

You can try to look at mod_logmnesia or mod_logxml for ejabberd.
