I think any standard modules shipped with drupal are ready to use 
without second thoughts.
We are in a testing phase anyway.
The Book module sounds like a good idea and the poll module probably, 
too. But for now I would focus on building the core and start 
enabeling/adding additional stuff later.
Therefore I suggest to enable only basic things we will need anyway the 
path, search, book, blog and maybe the forum module (maybe I missed some).

Imho there is no need for the upload module since we can upload all 
relevant files (screenshots and logos) perfectly with the cck field "image".
The only third party modules we need right now is the cck and the views 
module. That way we can start building our own nodetypes - wich will be 
the core of the whole jabber.org page.
(clients, servers, components, libraries, custom projects, ...)
