OK, I backed up the database and created a new directory for all the 
test/staging sites:

/var/stage/

Under that directory you will find drupal-5.6/ and then a replica of 
what is at /var/www/drupal-5.6/

Then I changed:

from /var/www/drupal-5.6/sites/stage.jabber.org

to /var/www/drupal-5.6/sites/new.jabber.org

So you will find that http://new.jabber.org/ probably works for you (you 
may need to wait for DNS to update). But http://stage.jabber.org/ does 
not work yet (that will be the real stage site from now on), for reasons 
I don't understand yet.

Confused? I am.

At least now we have a backup and a real test site at stage.jabber.org. 
Next we need to copy the current www.jabber.org to old.jabber.org or 
whatever, and then change new.jabber.org to be www.jabber.org.

But I think I've messed around with enough things for today. :)
