EJabberd sounds like the cherry on top of the christmas cake to me, so maybe start with that. If erlang is too big a download you can try:

Prosody: http://prosody.im/ (Written in Lua, and Lua is small)
JabberD: http://jabberd2.xiaoka.com/ (version 2.x)
OpenFire: http://www.igniterealtime.org/projects/openfire/index.jsp
