I'd use XEP-0203: Delayed Delivery.

 <message>
      from='kingrichard at royalty.england.lit/throne'
      id='bi29sg183b4v'
      to='northumberland at shakespeare.lit/westminster'>
  <received xmlns='urn:xmpp:receipts' id='richard2-4.1.247'/>

  <delay xmlns='urn:xmpp:delay'
      from='kingrichard at royalty.england.lit/throne'
      stamp='2002-09-10T23:08:25Z' />

 </message>

That would be because of that 'from' attribute on the <delay/>
element, among other things.
